Hungarian keto rakott karfiol, a baked cauliflower casserole layered with seasoned meat, sour cream, and cheese for a comforting low-carb meal.

🇭🇺

Keto Rakott Karfiol

A Hungarian Classic with a Low-Carb Twist

If you're following a low-carb or ketogenic lifestyle and craving something hearty, comforting, and full of Hungarian flavor, Keto Rakott Karfiol is a recipe worth trying.

Rakott Karfiol translates to “layered cauliflower.” This traditional Hungarian casserole is made with tender cauliflower, seasoned meat, creamy sour cream, eggs, and cheese. Traditional versions may include rice, potatoes, or breadcrumbs, but this low-carb version leaves them out while keeping the rich, comforting flavors of the original.

This is the kind of dish that feels right at home around a family table.

🏰 A Taste of Hungary

Hungarian cooking is known for bold flavors, paprika, and hearty home-style dishes. Rakott Karfiol is a wonderful example of that comforting tradition.

My husband is Hungarian, so Hungarian food has become a special part of our family's kitchen. I love finding ways to enjoy traditional Hungarian flavors while adapting favorite dishes to our low-carb lifestyle.

For this keto version, cauliflower takes the place of the traditional higher-carb ingredients while the savory meat, paprika, sour cream, and cheese keep the casserole rich and satisfying.

🥘 Keto Rakott Karfiol

Hungarian Layered Cauliflower Casserole

Servings: 6

Ingredients

  • 1 large head cauliflower, cut into florets

  • 1 lb (450g) ground pork or beef (optional: replace pork or beef with thin slices of Hungarian dried smoked sausage)

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon Hungarian sweet paprika

  • Salt and black pepper, to taste

  • ½ teaspoon ground caraway seeds, optional

  • 1 cup sour cream

  • 3 large eggs

  • ½ cup shredded cheese, such as cheddar, mozzarella, or Hungarian Trappista-style cheese

  • 2 tablespoons olive oil or lard

  • Butter, for greasing the baking dish

How to Make Keto Rakott Karfiol

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

2. Prepare the Cauliflower

Steam or boil the cauliflower florets until just tender, about 5–7 minutes. Drain the cauliflower very well and set it aside. Removing excess water helps prevent the finished casserole from becoming watery.

3. Cook the Meat

Heat the olive oil or lard in a large skillet over medium heat. Add the chopped onion and sauté until translucent. Add the garlic and ground meat and cook until the meat is browned and cooked through. Season with Hungarian paprika, salt, pepper, and caraway seeds if using. Stir well and remove from the heat.

4. Make the Sour Cream Mixture

In a bowl, whisk together the sour cream and eggs. Season lightly with salt and pepper.

5. Layer the Casserole

Grease a 9x13-inch baking dish with butter. Add half of the cauliflower to the bottom of the dish. Spread the cooked meat mixture evenly over the cauliflower, then add the remaining cauliflower. Pour the sour cream and egg mixture evenly over the top.

6. Add the Cheese

Sprinkle the shredded cheese evenly over the casserole.

7. Bake

Bake uncovered for 30–35 minutes or until the casserole is hot and the cheese is golden and bubbly.

8. Rest and Serve

Allow the casserole to rest for about 10 minutes before serving. For an extra touch of Hungarian flavor, garnish with fresh parsley or a light sprinkle of paprika.

Serve warm and enjoy!

❤️ Why You'll Love This Keto Rakott Karfiol

  • Rich Hungarian flavor from paprika and sour cream

  • A low-carb alternative to traditional Rakott Karfiol

  • Hearty and satisfying

  • Simple ingredients

  • Easy to prepare ahead of time

  • Great for family dinners

  • Delicious reheated the next day

🌶️ A Little About Hungarian Paprika

Paprika is one of the ingredients most closely associated with Hungarian cooking. Although peppers originated in the Americas and eventually made their way to Europe, Hungary developed its own distinctive paprika traditions and varieties. Hungarian paprika can range from sweet and mild to hot, and it plays an important role in many beloved Hungarian dishes. It is one of the flavors that makes Hungarian cooking so recognizable and one of the reasons I love bringing Hungarian-inspired recipes into our family kitchen.

Family, Food, and Faith

Food brings people together and helps keep family traditions alive. From American comfort food to the Hungarian, German, and Swedish influences in our family, sharing meals is one of the simple joys I cherish. I'm grateful that God gives us opportunities to slow down, enjoy our loved ones, and create memories around the table. As 1 Thessalonians 5:18 reminds us, “Give thanks in all circumstances.” Low-carb eating doesn't mean giving up comfort, culture, or connection. Sometimes, a few simple swaps are all it takes to bring a favorite meal back to the table.

🧀 Körözött – A Creamy Taste of Hungarian Comfort

Hungarian körözött cheese spread made with creamy cheese, paprika, and herbs, served as a flavorful low-carb appetizer.

Körözött

A Creamy Taste of Hungarian Comfort

If you've ever sat at a sunlit table in a Hungarian kitchen, chances are you may have tasted körözött—a creamy, paprika-infused cheese spread that's as nostalgic as it is delicious. This simple, rustic Hungarian dish is full of flavor and incredibly easy to make. It's creamy, tangy, savory, and seasoned with sweet Hungarian paprika and caraway seeds.

Today, I'm sharing not only the recipe, but also a little taste of Hungarian food culture. This is one of my favorite Hungarian spread recipes because it is so different from many traditional American dips and spreads—and oh so good!

🇭🇺 What Is Körözött?

Körözött (pronounced kur-oh-zott) is a traditional Hungarian cheese spread made with fresh túró, a type of curd cheese similar to quark or farmer's cheese. It is traditionally combined with ingredients such as paprika, butter, caraway seeds, and fresh green onions or scallions. The result is a creamy, tangy, savory spread with the unmistakable warmth of Hungarian paprika. Körözött is often enjoyed as a simple snack, appetizer, or part of a meal, traditionally spread onto bread or enjoyed with fresh vegetables.

❤️ A Little Taste of Hungarian Family Life

My husband is Hungarian, so Hungarian food and traditions have become a special part of our family's kitchen. One of the things I love about Hungarian cooking is that some of the most memorable foods don't have to be complicated. Simple ingredients, good seasoning, and time around the table can create something special. Körözött reminds me of that kind of food—rustic, flavorful, and meant to be shared.

🥣 Classic Körözött Recipe

Ingredients

  • 7 oz farmer's cheese (I buy the farmer's cheese from Publix, as not all grocery stores carry it)

  • 2 tbsp soft butter

  • 1 tsp sweet Hungarian paprika (plus more to taste)

  • 1 tsp caraway seeds (optional, but traditional)

  • 2 tbsp finely chopped scallions or green onions

  • Salt and pepper to taste

  • A dash of sour cream or yogurt if you want it smoother

Instructions

1. Combine the Cheese and Butter

In a bowl, mix the farmer's cheese and softened butter until creamy.

2. Add the Flavor

Stir in the paprika, caraway seeds if using, and finely chopped green onions or scallions.

3. Season

Add salt and pepper to taste. Adjust the paprika to your preference.

4. Chill

Cover and refrigerate for at least 30 minutes to allow the flavors to blend. For even more flavor, you can prepare it the night before and let it chill overnight.

5. Serve

Serve with fresh or crusty keto bread, cucumbers, radishes, or bell pepper slices. You can also enjoy it with lettuce wraps or your favorite keto-friendly crackers.

🌿 Easy Keto Serving Ideas

Körözött is naturally low in carbohydrates and makes a delicious addition to a low-carb snack plate.

Try serving it with:

  • Sliced cucumbers

  • Radishes

  • Bell pepper slices

  • Lettuce wraps

  • Keto seed crackers

  • Low-carb bread

  • Fresh herbs such as dill

🌊 Körözött Beyond the Kitchen

Whether you're enjoying a picnic near Lake Balaton in Hungary, at a local park, or simply sitting around your own kitchen table, körözött is a wonderful reminder that simple food can create lasting memories. Food has a way of connecting us to places we've visited, people we love, and traditions passed down through generations. For our family, Hungarian recipes are one way we bring a little piece of that culture into our everyday lives.

❤️ Simple Food, Big Memories

Körözött may be a simple cheese spread, but sometimes the simplest foods are the ones we remember most. A bowl of creamy paprika cheese, fresh vegetables, good conversation, and family around the table. That's the kind of food experience I love.

I hope you enjoy this little taste of Hungarian comfort as much as we do.

🍒 A Taste of Hungary: Keto-Friendly Chilled Fruit Soup (Gyümölcsleves)

Hungarian chilled fruit soup (gyümölcsleves), a refreshing sweet-tart soup made with fruit and served cold for a summer meal.

🍒 A Taste of Hungary

 Keto-Friendly Chilled Fruit Soup (Gyümölcsleves)

When summer arrives in Hungary, it brings sunshine, fresh fruit, family gatherings, and the refreshing taste of gyümölcsleves—Hungarian chilled fruit soup.

This unique Hungarian dish is one of those foods that may surprise you the first time you try it. A chilled, creamy fruit soup might sound unusual if you didn't grow up with it, but in Hungary it is a beloved taste of summer. For many Hungarian families, gyümölcsleves brings back memories of childhood, grandparents, gardens, markets, and meals shared around the family table.

Today, I'm giving this traditional favorite a low-carb, keto-friendly twist while keeping the sweet-tart flavors and Hungarian spirit that make it so special. 🍒🇭🇺

❤️ A Family Favorite

This soup has an especially special place in our family because it's our daughter's favorite soup! I love that she enjoys a traditional Hungarian recipe that connects her to her Hungarian heritage. Food has a funny way of doing that. It can introduce children to another culture while creating new family memories at the same time. For us, gyümölcsleves isn't just a Hungarian recipe. It's something our family enjoys together, and that makes it even more meaningful.

🍒 Finding the Sour Cherries

For this recipe, we like to buy jars of sour cherries from Aldi. Sour cherries can be a specialty item, so Aldi doesn't always carry them. If we can't find them at Aldi, there is a Polish-European grocery store near us that carries them. If you're having trouble finding sour cherries, checking European or Eastern European grocery stores can be a great option. Sour cherries are commonly used in many Central and Eastern European recipes, so specialty markets are often a good place to look.

🍑 Fruit Soup & Family: A Hungarian Tradition

Hungarian recipes are often passed down from one generation to the next. Sometimes they're written down in an old cookbook and sometimes they're simply remembered by heart. Gyümölcsleves is a perfect example. There are many variations. Some Hungarian families make their fruit soup primarily with sour cherries, while others add fruits such as peaches, apricots, apples, or berries depending on the season and what is available. That's part of the beauty of this recipe. It can change with the seasons. Fresh fruit, a little cinnamon and clove, and a creamy finish come together to create a dish that is refreshing, comforting, and distinctly Hungarian.

🍒 Keto-Friendly Hungarian Chilled Fruit Soup

Gyümölcsleves

Serves: 4
Prep Time: 10 minutes
Cook Time: 10–15 minutes
Chill Time: At least 2 hours

🧂 Ingredients

  • 2 cups sour cherries, fresh or frozen

  • 4 cups water

  • 1–2 tablespoons erythritol or another keto-friendly sweetener, adjusted to taste

  • 1 cinnamon stick

  • 2–3 whole cloves

  • ½ cup full-fat sour cream or plain unsweetened Greek yogurt

  • 1 tablespoon xanthan gum, optional

  • Pinch of salt

  • Splash of fresh lemon juice, optional

Optional fruit:

  • 1 small apple, peeled and diced

  • 1 peach or apricot, sliced

For a lower-carb version, leave out the apple and peach/apricot and use a measured portion of sour cherries.

🥣 How to Make Hungarian Chilled Fruit Soup

1. Cook the fruit

Place the sour cherries, water, sweetener, cinnamon stick, cloves, and salt in a large pot. Bring to a gentle boil, then reduce the heat and simmer for about 10–15 minutes, until the fruit is tender. If using the optional apple, peach, or apricot, add them with the cherries.

2. Prepare the creamy mixture

In a small bowl, whisk together the sour cream or Greek yogurt and xanthan gum until smooth.

3. Temper the cream

Slowly add a small amount of the hot soup to the sour cream mixture while whisking constantly. This helps bring the temperatures together and reduces the chance of the dairy mixture curdling.

4. Combine

Slowly stir the tempered sour cream mixture back into the soup. Cook gently for another 3–5 minutes. Avoid a vigorous boil.

5. Add lemon

Remove from the heat and add a splash of fresh lemon juice, if desired. Taste and adjust the sweetness or lemon flavor.

6. Chill

Allow the soup to cool slightly, then refrigerate for at least 2 hours. This soup is meant to be served cold, making it especially refreshing during warm summer weather.

7. Serve

Serve chilled in bowls or cups. For a pretty presentation, garnish with a few cherries, a small dollop of sour cream or whipped cream on top, with a light sprinkle of cinnamon.

💛 A Taste of Hungarian Summer

One of the things I love about Hungarian food is how strongly it connects food with memories. A recipe doesn't have to be complicated to tell a story. Gyümölcsleves reminds me of the way food can connect generations, the recipes remembered from grandparents, the seasonal fruit gathered during summer, and the simple pleasure of sitting down together to eat. My husband is Hungarian, and sharing these traditional foods with our family is one way we can keep those cultural connections alive while making them work for our low-carb lifestyle. Now that it's our daughter's favorite soup, this recipe is becoming part of our family's story too. ❤️

🥄 Can You Make Fruit Soup Keto?

Yes, but the type and amount of fruit matter. Fruit naturally contains carbohydrates, and sour cherries, apples, peaches, and apricots all contribute carbohydrates to the recipe.

For a lower-carb version:

  • Use a measured amount of fruit.

  • Consider leaving out the apple and peach/apricot.

  • Use a keto-friendly sweetener instead of sugar.

  • Choose full-fat sour cream or unsweetened Greek yogurt.

  • Keep your serving size in mind.

Because the carbohydrate content can vary significantly depending on the fruit and exact ingredients used, nutrition information should be considered an estimate.

🍒 A Chilled Bowl Full of Memories

Hungarian fruit soup is more than a recipe to me. It is a reminder that food can carry culture, family stories, and memories from one generation to the next. For our family, it is also a reminder that the traditions we share with our children can become their own favorite memories. Whether you grew up eating gyümölcsleves or you're discovering it for the first time, I hope this keto-friendly version gives you a little taste of Hungary, and maybe you'll share a bowl with someone you love. Because sometimes the simplest foods create the sweetest memories. 💛🇭🇺

Why You'll Love This Keto Chocolate Almond Smoothie

  • Ready in 5 minutes: Simply add the ingredients to your blender and blend until smooth.

  • Easy to customize: Adjust the sweetness, change the cream, or add spinach.

  • Low in carbohydrates: The recipe is designed to be low-carb, depending on the brands and quantities you use.

  • Perfect for busy mornings: Enjoy it for breakfast, as a snack or after a workout.

Ingredients You'll Need

This recipe makes one generous smoothie.

  • 1 cup unsweetened almond milk: Provides a smooth base without adding much carbohydrate.

  • 2 tablespoons heavy cream or canned coconut cream: Adds richness and creaminess.

  • 1 tablespoon almond butter: Gives the smoothie a delicious nutty flavor.

  • 1 scoop (about 30 grams) low-carb vanilla protein powder: Adds protein and complements the chocolate.

  • 1 tablespoon unsweetened cocoa powder: Provides a rich chocolate flavor without added sugar.

  • 4–6 ice cubes: Helps chill and thicken the smoothie.

  • 4–6 drops liquid stevia or to taste: Adds sweetness without relying on regular sugar.

Optional Add-In

  • 1 cup fresh spinach or ½ cup frozen spinach: An easy way to add greens to your smoothie.

Ingredient tip: Check the labels on your almond milk, protein powder, almond butter, and sweetener. Carbohydrates, calories, and serving sizes vary by brand, so your final nutrition information may differ from the estimate below.

How to Make a Keto Chocolate Almond Smoothie

Step 1: Add the ingredients.

Pour the unsweetened almond milk into your blender. Add the heavy cream or coconut cream, almond butter, vanilla protein powder, cocoa powder, stevia, and ice.

Step 2: Blend until smooth.

Blend for approximately 30–45 seconds, or until the ingredients are thoroughly combined and the smoothie reaches your preferred consistency.

Step 3: Adjust the flavor.

Taste the smoothie and add a few more drops of stevia if you prefer a sweeter chocolate flavor. If it's too thick, blend in a little more almond milk.

Step 4: Add spinach, if desired.

For an extra serving of greens, add fresh or frozen spinach and blend until completely smooth.

Step 5: Pour and enjoy.

Pour into a glass and serve immediately while cold and creamy.

Tips for the Best Chocolate Almond Smoothie

Choose Unsweetened Cocoa Powder

Unsweetened cocoa powder provides chocolate flavor without the added sugar found in many sweetened cocoa mixes. Start with one tablespoon and adjust to your taste.

Use Smooth Almond Butter

Creamy almond butter blends easily and creates a more consistent texture. Stir natural almond butter thoroughly before measuring if the oil has separated.

Adjust the Sweetness

Different protein powders have different levels of sweetness. Start with the recommended amount of stevia, then taste before adding more.

Make It Thicker or Thinner

For a thicker smoothie, add a few more ice cubes. For a thinner consistency, blend in another splash of unsweetened almond milk.

Easy Variations

Extra Chocolate Keto Smoothie

Add another teaspoon of unsweetened cocoa powder for a deeper chocolate flavor. Taste and adjust the sweetener as needed.

Dairy-Free Chocolate Almond Smoothie

Use canned coconut cream instead of heavy cream and choose a protein powder that is specifically labeled dairy-free. Check all ingredient labels to ensure they meet your dietary needs.

Chocolate Almond Green Smoothie

Add a handful of fresh spinach or some frozen spinach. Blend thoroughly for a smooth texture. The chocolate and almond flavors help complement the mild taste of spinach.

Chocolate Peanut Butter Smoothie

Replace the almond butter with natural peanut butter for a different nutty flavor. Check the label for added sugars and carbohydrates.

Chocolate Almond Breakfast Smoothie

Serve alongside a low-carb breakfast such as eggs or a simple omelet if you'd like a more substantial meal.

Frequently Asked Questions

Is a chocolate almond smoothie keto-friendly?

This smoothie is designed to be low in carbohydrates and may fit into a ketogenic eating plan. However, the carbohydrate count depends on your ingredients and portion size. Check the labels and calculate the totals using the products you actually use.

Can I make this smoothie without protein powder?

Yes. You can omit the protein powder, but this will change the flavor, texture, protein content, and total nutrition information. You may want to adjust the sweetness as well.

Can I use coconut milk instead of almond milk?

Yes. Unsweetened coconut milk can be substituted, but the results will vary depending on the product. Carton coconut milk and canned coconut milk have different consistencies and nutritional profiles.

Does spinach change the taste?

Spinach has a relatively mild flavor, especially when blended with cocoa powder and almond butter. Start with a small handful, if you're trying it for the first time.

Can I make this smoothie ahead of time?

This smoothie tastes best immediately after blending. If necessary, refrigerate it in a covered container and consume it within 24 hours. Shake or stir well before drinking because separation may occur.

Can I make it without added sweetener?

Absolutely. If your vanilla protein powder is already sweetened, you may not need any additional stevia. Blend the ingredients first, taste, and adjust as desired.

  • 1 cup low-sodium chicken broth

  • 1 teaspoon dried sage, crumbled

  • Salt, to taste

  • Black pepper, to taste

Optional: Use 1 tablespoon of freshly chopped sage instead of dried sage for a fresh herbal flavor.

Instructions

1. Prepare the Pork

Slice the pork tenderloin into evenly sized medallions, approximately 1 inch thick. Pat the pieces dry with paper towels, then season both sides with salt and black pepper.

2. Sear the Medallions

Heat the olive oil in a large skillet over medium-high heat. Arrange the pork in a single layer, working in batches if necessary. Sear for approximately 2–3 minutes per side, until nicely browned. Transfer the pork to a plate. The medallions will finish cooking in the broth.

3. Make the Sage Broth

Reduce the heat to medium. Pour the chicken broth into the same skillet and add the dried sage. Use a wooden spoon to scrape up the browned bits from the bottom of the pan. These add extra flavor to the broth.

4. Simmer Until Done

Return the pork and any accumulated juices to the skillet. Reduce the heat and simmer gently for approximately 5–7 minutes, adjusting the time for the thickness of the medallions. Check the temperature in the thickest part of the pork with a food thermometer. Whole cuts of pork should reach at least 145°F (63°C), followed by a three-minute rest. Follow the USDA's safe cooking temperature guidance.

Avoid boiling the broth vigorously, as gentle simmering helps keep the pork tender.

5. Serve

Transfer the pork medallions to serving plates and spoon the sage broth over the top. Serve warm with your favorite low-carb side dishes.

Tips for the Best Pork Medallions

  • Cut evenly: Similar-sized medallions cook more consistently.

  • Dry the pork first: Patting the surface dry helps the meat brown instead of steam.

  • Don't crowd the skillet: Sear in batches if necessary to develop a golden crust.

  • Watch the temperature: Thin medallions can cook quickly, so use a thermometer rather than relying only on the clock.

  • Adjust the broth: If you prefer a stronger sage flavor, add a little extra sage. Taste the broth before adding more salt because chicken broth already contains sodium.

Storage and Reheating

Refrigeration: Allow leftovers to cool slightly, then transfer them to an airtight container and refrigerate within two hours. Use within 3–4 days.

Freezing: Freeze the cooked pork with some of its broth in a freezer-safe container. For best quality, use within 2–3 months.

Reheating: Warm gently in a covered skillet over low heat with a little broth, stirring or turning the pork as needed. You can also microwave it in a covered, microwave-safe dish, using short intervals and turning the pieces for even heating. Reheat leftovers to 165°F (74°C).
