Juicy pork tenderloin is pan-seared until golden, then gently simmered in a savory sage broth. It’s rich, satisfying, and ultra-low in carbs—just 1g net carbs per serving!

🧂 Ingredients:

  • 1 lb pork tenderloin, sliced into 1-inch medallions

  • 2 tbsp olive oil (or avocado oil for a higher smoke point)

  • 1 cup low-sodium chicken broth

  • 1 tsp dried sage, crumbled

  • Salt and pepper, to taste

🍳 Instructions:

1. Prepare the Pork
Slice pork tenderloin into 1-inch thick medallions. Pat dry to help with searing, then season generously with salt and pepper.

2. Sear to Perfection
Heat olive oil in a large skillet over medium-high heat. Add pork medallions in a single layer and sear 2–3 minutes per side until browned. Remove and set aside.

3. Build the Sage Broth
In the same skillet, pour in chicken broth and add the dried sage. Use a wooden spoon to scrape up all the delicious browned bits from the bottom—these add serious flavor.

4. Simmer and Finish
Return the pork medallions to the pan. Reduce heat to low and simmer for 5–7 minutes, or until the pork is fully cooked and tender, and the broth is aromatic.

5. Serve Hot
