🍋 Hungarian Keto Lemon Soup (Citromleves)
A Tangy Taste of Tradition
If you’ve never heard of Hungarian Lemon Soup or Citromleves as it’s called in Hungarian, you’re in for a bright, zesty surprise. This sweet-tart soup is a unique taste of Hungarian cuisine and can be served warm or chilled as a light appetizer or refreshing dish. Here’s the twist: this version is made keto-friendly without losing the comforting flavors and old-world charm that make Citromleves special. 💛
🏡 A Bowl Full of Hungarian Culture
In Hungarian homes, food is about much more than simply eating. Meals bring people together, and recipes often carry memories from one generation to the next.
My husband is Hungarian, and one of the things I love about Hungarian food is how much history and family tradition can be found around the table. Even a simple bowl of soup can bring back memories of childhood, family kitchens, and long meals shared together. Citromleves is a wonderful example. Its combination of lemon, cinnamon, vanilla, and creamy egg yolk creates a flavor that is both refreshing and comforting. This keto version keeps those familiar flavors while replacing traditional sugar with a low-carb sweetener.
🍋 Keto Hungarian Lemon Soup (Citromleves)
Serves: 4–6
Prep Time: 10 minutes
Cook Time: 15 minutes
Serving Size: 1 cup, based on 6 servings
🧂 Ingredients
4 cups water
¾ cup + 1 tablespoon unsweetened almond milk or heavy cream
2 egg yolks
Zest of 1 lemon
Juice of 2 lemons, about ½ cup
1 cinnamon stick or ½ teaspoon ground cinnamon
1 teaspoon vanilla extract
⅓ cup powdered erythritol or monk fruit sweetener, adjusted to taste
Pinch of salt
Optional Garnishes:
Thin lemon slices
Small swirl of coconut cream
Dusting of cinnamon
Fresh parsley
Fresh dill weed
🥣 How to Make Keto Citromleves
1. Boil the base
In a medium pot, combine the water, lemon zest, cinnamon stick, and a pinch of salt. Bring to a gentle boil.
2. Add the sweetener
Add the keto-friendly sweetener and vanilla extract. Stir until the sweetener has dissolved.
3. Prepare the egg mixture
In a separate bowl, whisk the egg yolks with the almond milk or heavy cream until smooth.
4. Temper the eggs
Slowly ladle some of the hot soup into the egg mixture while whisking continuously. This gently warms the eggs and helps prevent them from scrambling. Pour the tempered mixture back into the pot.
5. Simmer gently
Reduce the heat and simmer gently for about 5 minutes. Do not let the soup boil or the egg yolks may curdle.
6. Add the lemon
Remove the soup from the heat and stir in the fresh lemon juice. Taste and adjust the sweetness or lemon flavor to your liking.
7. Serve
Citromleves can be served warm or chilled. Garnish with lemon slices, cinnamon, or your favorite fresh herbs.
🍋 Why This Soup Works for Keto
Lemon juice does contain natural carbohydrates, but the amount is divided among several servings. Using a keto-friendly sweetener instead of traditional sugar helps keep this soup much lower in carbohydrates. For an especially creamy version, use heavy cream instead of almond milk. Keep in mind that heavy cream will increase the calories and fat. As always, nutrition information can vary depending on the specific ingredients and brands you use.
🍽 A Taste of Low-Carb Home
Keto doesn't have to mean giving up the foods and flavors connected to your family and culture. That's one of the things I love about creating low-carb versions of traditional recipes. You can make small changes while still keeping the flavors, memories, and meaning behind the dish.

❤️ A Memory of the Sparhelt
One of my husband's memories of his Hungarian childhood is making soups on the Sparhelt. A Sparhelt is a traditional Hungarian wood-burning stove, where food is cooked using heat from burning wood. For many Hungarian families, these old stoves are closely connected with memories of home cooking, family, and the comforting smells of food simmering in the kitchen. That is what makes recipes like Citromleves so special to me. Food can carry a little piece of home with it, and whether a recipe is prepared on a traditional Sparhelt or in a modern kitchen, food is love, no matter how it’s made. 💛
📊 Estimated Nutrition Information
