🦃 A Thanksgiving Table Full of Gratitude: Family, Faith & Low-Carb Living

November has a way of reminding us to slow down. The leaves are changing, the days are getting shorter, and Thanksgiving gives us an opportunity to pause from the busyness of everyday life and remember what truly matters. For our family, Thanksgiving is about so much more than food. It's about family, faith, gratitude, traditions, and the blessing of gathering around the table together. Yes, food is certainly part of the celebration! ❤️ As someone following a lower-carb lifestyle, I've also learned that Thanksgiving doesn't have to mean choosing between enjoying the holiday and staying true to the way we want to eat. There is room for both.

🙏 Giving Thanks to God

Before we talk about turkey, side dishes, or dessert, Thanksgiving begins with gratitude.

We have so many reasons to thank God.

For our family.

For our home.

For the people He has placed in our lives.

For the ability to gather around a table and share a meal.

For the memories we've made and the ones still waiting to be created.

Life isn't perfect, and every season brings its own challenges. Thanksgiving reminds me to look for God's blessings even in the ordinary moments. 

Sometimes those blessings are right in front of us.

A child's laughter.

A conversation with my husband.

A family meal.

A prayer before dinner.

A quiet moment when we realize just how much we have to be thankful for.

❤️ Family Around the Table

One of my favorite things about Thanksgiving is the gathering around the table. Our family has American, Hungarian, Swedish, and German roots, and food gives us a beautiful way to celebrate those different traditions. Every family has its own recipes, stories, and traditions passed down through generations. Some recipes remind us of grandparents. Some remind us of childhood. Others become new traditions that our children will hopefully remember years from now. I love that food can tell a story. A recipe can carry a piece of our heritage from one generation to the next. Sometimes, we take those beloved recipes and give them a little modern twist to fit the way our family eats today.

For me, the bigger picture is about being intentional most of the time and enjoying special occasions without turning one meal into an all-or-nothing situation. A healthy lifestyle isn't created by one Thanksgiving dinner or undone by one Thanksgiving dinner. It's built through the everyday choices we make over time.

🇭🇺 Celebrating More Than One Culture

Because my husband is Hungarian and our family has American, Hungarian, Swedish, and German roots, our table often reflects more than one culture. That's something I treasure. Food gives us a way to introduce our daughter to different traditions and flavors while creating traditions that belong uniquely to our family. 

Maybe Thanksgiving includes classic American dishes alongside a Hungarian-inspired recipe.

Maybe a familiar family favorite gets a low-carb makeover.

Maybe we're simply sitting around the table sharing stories.

Whatever ends up on the plates, what matters most is the people sitting around them.

👧 Teaching Our Daughter Gratitude

As parents, we also have the opportunity to teach our children that Thanksgiving is about more than turkey and dessert.

It's about generosity.

It's about noticing the blessings we sometimes take for granted.

We want our daughter to understand that family traditions aren't only about what we eat or what we do.

These are the things that can stay with a child long after the Thanksgiving decorations are packed away.

🥧 Creating New Traditions

Some of our family traditions come from generations before us. Others are completely new. That's one of the beautiful things about raising a family. We get to carry forward the traditions that matter while creating new ones along the way. Maybe one year we make a special low-carb dessert. Another year we take a family walk after dinner. Maybe we spend time talking about something we're especially thankful for. The tradition doesn't have to be elaborate. It just has to mean something.

👩‍🍳 How to Make Keto Cauliflower Flatbread Pizza

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2: Prepare the Cauliflower

If you're using frozen riced cauliflower, thaw it completely. Place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. This is one of the most important steps for getting a firmer, crispier crust.

Step 3: Make the Crust

Add the riced cauliflower, eggs, mozzarella cheese, oregano, garlic powder, salt, and black pepper to a large bowl. Mix until everything is well combined.

  • 3 large eggs

  • ½ cup shredded cheese, such as cheddar, mozzarella, or Hungarian Trappista-style cheese

  • 2 tablespoons olive oil or lard

  • Butter, for greasing the baking dish

How to Make Keto Rakott Karfiol

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

2. Prepare the Cauliflower

Steam or boil the cauliflower florets until just tender, about 5–7 minutes. Drain the cauliflower very well and set it aside. Removing excess water helps prevent the finished casserole from becoming watery.

3. Cook the Meat

Heat the olive oil or lard in a large skillet over medium heat. Add the chopped onion and sauté until translucent. Add the garlic and ground meat and cook until the meat is browned and cooked through. Season with Hungarian paprika, salt, pepper, and caraway seeds if using. Stir well and remove from the heat.

When summer arrives in Hungary, it brings sunshine, fresh fruit, family gatherings, and the refreshing taste of gyümölcsleves—Hungarian chilled fruit soup.

This unique Hungarian dish is one of those foods that may surprise you the first time you try it. A chilled, creamy fruit soup might sound unusual if you didn't grow up with it, but in Hungary it is a beloved taste of summer. For many Hungarian families, gyümölcsleves brings back memories of childhood, grandparents, gardens, markets, and meals shared around the family table. 

Today, I'm giving this traditional favorite a low-carb, keto-friendly twist while keeping the sweet-tart flavors and Hungarian spirit that make it so special. 🍒🇭🇺

This soup has an especially special place in our family because it's our daughter's favorite soup! I love that she enjoys a traditional Hungarian recipe that connects her to her Hungarian heritage. Food has a funny way of doing that. It can introduce children to another culture while creating new family memories at the same time. For us, gyümölcsleves isn't just a Hungarian recipe. It's something our family enjoys together, and that makes it even more meaningful.

For this recipe, we like to buy jars of sour cherries from Aldi. Sour cherries can be a specialty item, so Aldi doesn't always carry them. If we can't find them at Aldi, there is a Polish-European grocery store near us that carries them. If you're having trouble finding sour cherries, checking European or Eastern European grocery stores can be a great option. Sour cherries are commonly used in many Central and Eastern European recipes, so specialty markets are often a good place to look.

🍑 Fruit Soup & Family: A Hungarian Tradition

Hungarian recipes are often passed down from one generation to the next. Sometimes they're written down in an old cookbook and sometimes they're simply remembered by heart. Gyümölcsleves is a perfect example. There are many variations. Some Hungarian families make their fruit soup primarily with sour cherries, while others add fruits such as peaches, apricots, apples, or berries depending on the season and what is available. That's part of the beauty of this recipe. It can change with the seasons. Fresh fruit, a little cinnamon and clove, and a creamy finish come together to create a dish that is refreshing, comforting, and distinctly Hungarian.

🍒 Keto-Friendly Hungarian Chilled Fruit Soup

Gyümölcsleves

Serves: 4
Prep Time: 10 minutes
Cook Time: 10–15 minutes
Chill Time: At least 2 hours

🧂 Ingredients

  • 2 cups sour cherries, fresh or frozen

  • 4 cups water

  • 1–2 tablespoons erythritol or another keto-friendly sweetener, adjusted to taste

  • 1 cinnamon stick

  • 2–3 whole cloves

  • ½ cup full-fat sour cream or plain unsweetened Greek yogurt

  • 1 tablespoon xanthan gum, optional

  • Pinch of salt

  • Splash of fresh lemon juice, optional

Optional fruit:

  • 1 small apple, peeled and diced

  • 1 peach or apricot, sliced

For a lower-carb version, leave out the apple and peach/apricot and use a measured portion of sour cherries.

🥣 How to Make Hungarian Chilled Fruit Soup

1. Cook the fruit

Place the sour cherries, water, sweetener, cinnamon stick, cloves, and salt in a large pot. Bring to a gentle boil, then reduce the heat and simmer for about 10–15 minutes, until the fruit is tender. If using the optional apple, peach, or apricot, add them with the cherries.

2. Prepare the creamy mixture

In a small bowl, whisk together the sour cream or Greek yogurt and xanthan gum until smooth.

3. Temper the cream

Slowly add a small amount of the hot soup to the sour cream mixture while whisking constantly. This helps bring the temperatures together and reduces the chance of the dairy mixture curdling.

4. Combine

Slowly stir the tempered sour cream mixture back into the soup. Cook gently for another 3–5 minutes. Avoid a vigorous boil.

5. Add lemon

Remove from the heat and add a splash of fresh lemon juice, if desired. Taste and adjust the sweetness or lemon flavor.

6. Chill

Allow the soup to cool slightly, then refrigerate for at least 2 hours. This soup is meant to be served cold, making it especially refreshing during warm summer weather.

7. Serve

Ingredients

As parents, we also enjoy making simple, delicious snacks together. There's something special about letting our daughter help in the kitchen and learn that food can be both fun and nourishing. Today, we're sharing a little summer treat: No-Bake Mini Strawberry Cheesecake Bites.🍓 They're creamy, lightly sweet, easy to make, and perfectly portioned for a summer snack.

🍓 No-Bake Mini Strawberry Cheesecake Bites

These little cheesecake bites are a refreshing treat for summer picnics, afternoon reading breaks, or a cozy evening on the porch. They're made without added sugar and use simple ingredients that come together without turning on the oven.

  • 1 cup cream cheese, softened

  • ¼ cup sour cream

  • ¼ cup powdered erythritol
