๐ Thankful Tuesday: Grateful for Comfort and Keto Wins ๐ฅ๐ง
It’s Thankful Tuesday, and today I’m counting my blessings—starting with easy, delicious meals that keep me on track with my keto goals. Comfort food doesn’t have to come with a carb crash. This creamy, cheesy casserole is the kind of dish that makes you feel like you’re indulging, but with only 4g net carbs per serving, your macros stay happy, too. ๐
๐ Keto Chicken Bacon Ranch Casserole
Servings: 6
Prep Time: 10 mins
Cook Time: 25 mins
Ingredients:

3 cups cooked chicken breast, shredded or chopped

6 slices bacon, cooked and crumbled

1 cup shredded mozzarella
-
1/2 cup shredded cheddar
-
1/2 cup ranch dressing (sugar-free)
-
1/2 cup sour cream
-
1/4 cup cream cheese, softened
-
1 tsp garlic powder
-
Salt and pepper to taste

Optional: Chopped green onions or parsley for topping. I sometimes like to add some hot sauce to the recipe to make it more like a chicken buffalo style casserole.
Instructions:

Preheat oven to 375°F (190°C).

In a large bowl, mix cooked chicken, ranch dressing, sour cream, cream cheese, garlic powder, salt, and pepper.

Stir in half the bacon, mozzarella, and cheddar.

Spread into a greased baking dish and top with remaining cheese and bacon (optional: save some bacon to sprinkle on the top of the casserole once it comes out of the oven).

Bake for 20–25 minutes, or until bubbly and golden.

Top with bacon, green onions or parsley, and serve warm!
