Chicken Paprikás is one of those dishes that feels like home. My husband is Hungarian, and bringing traditional Hungarian flavors into our low-carb kitchen has become a special part of our family's food journey.

This keto-friendly version keeps the comforting flavors of classic Chicken Paprikás while making it easier to enjoy as part of a low-carb lifestyle. The combination of tender chicken, Hungarian paprika, onion, garlic, and a creamy sauce creates a satisfying dinner the whole family can enjoy.

January often feels like a fresh page. The Christmas decorations come down, the holiday leftovers are finished, and we begin looking ahead to a brand-new year. There is something exciting about a new beginning. For me, the New Year isn't about becoming a completely different person. It is about being grateful for where we have been, trusting God with where we are going, and making small, meaningful choices for the year ahead. For our family, that includes spending time together, continuing our traditions, enjoying good food, and finding a balanced way to live a lower-carb lifestyle.

A New Year Begins with Gratitude ❤️

Before looking ahead, I think it is important to look back. The past year may have brought happy memories, difficult moments, answered prayers, unexpected changes, celebrations, and lessons. Some seasons are easier than others, but through all of them, God is faithful. The beginning of a new year gives us a beautiful opportunity to stop and say thank you.

Thank you for family.

Thank you for our home.

Thank you for the people who love us.

Thank you for the meals we shared and the memories we made.

And, most importantly, thank you for God's presence through every season.

Putting God First in the New Year ✝️

January is often filled with goals and resolutions. People make lists of things they want to change, accomplish, improve, or achieve. Those things can be helpful, but I also want to remember that my plans are not ultimately in my own hands. I want to begin the year with prayer.

I can also ask:

How can I grow in faith?

How can I be a better wife and mother?

How can I serve others?

How can I use what God has given me wisely?

How can I make our home a place filled with love, peace, and hospitality?

Those questions can lead us toward goals that go much deeper than a New Year's resolution.

After the holidays, January can be a natural time to return to the routines that make us feel our best. For me, lower-carb living is not about perfection. It is about finding foods that I enjoy and that fit the way I want to eat. The New Year doesn't need to begin with extreme restrictions or unrealistic promises.

Sometimes a fresh start can be as simple as:

  • Planning a few meals for the week

  • Cooking more meals at home

  • Keeping easy low-carb foods available

  • Drinking plenty of water

  • Including more vegetables

  • Choosing protein-rich meals

  • Preparing healthy snacks ahead of time

  • Finding lower-carb versions of favorite recipes

  • Getting back into a comfortable routine

Small choices can add up over time.

We Don't Need a Perfect January

January can sometimes come with a lot of pressure. New diets. New workout plans. New goals. New expectations. Social media can make it seem like everyone is completely transforming their lives on January 1st, but real life doesn't usually work that way. Life is messy. Families get busy. Plans change. Some days go wonderfully, and other days don't. That's okay. A healthy lifestyle doesn't require perfection. If you have a day that doesn't go according to plan, you can simply begin again at the next meal. There is no need to wait for Monday. There is no need to wait for next month. There is always an opportunity for a fresh start.

Family Goals Instead of Just Personal Goals

One thing I love about a new year is thinking about what we want our family life to look like. Instead of focusing only on individual goals, we can think about the things we want to do together. Maybe it's having more family dinners. Maybe it's cooking together. Maybe it's traveling somewhere new. Maybe it's spending more time outdoors. Maybe it's continuing traditions from our heritage. Maybe it's creating completely new traditions of our own. For our family, food is often part of those memories. Our table brings together American, Hungarian, Swedish, and German roots. Every recipe has a story. Every family tradition has a little piece of where we came from, and every new year gives us an opportunity to create more memories.

I hope our daughter grows up knowing that our kitchen was a place where she was welcomed, where she could learn, and where family memories were made.

None of us knows exactly what the new year will bring. There may be celebrations. There may be challenges. There may be changes we never expected, but we can step into the year with hope. We can make plans while remembering that God is ultimately in control.

I want to keep sharing the flavors and traditions that are part of our family story.

I want to spend more time around the table.

I want to make memories with my family.

I want to continue growing in my faith.

And, I want to remember that the ordinary moments can be some of the most meaningful ones.

A family dinner.

A prayer before a meal.

A recipe passed down.

A laugh around the table.

Those are the moments I want to remember.

A December Full of Joy: Family, Faith & Low-Carb Holiday Traditions 🎄❤️

December has a special kind of magic.

The Christmas lights are out, homes begin to smell like cinnamon and holiday cooking, Christmas music fills the house, and family traditions seem to become even more meaningful.

For our family, December is about much more than food. It is about faith, family, traditions, gratitude, and making memories together.

As an American-Hungarian family with Swedish and German roots, our holiday table brings together pieces of the cultures and traditions that have shaped our family. Some traditions are old, some are new, and some are recipes we have adapted to fit the way we enjoy eating today. Of course, I love finding ways to make some of our favorite holiday foods lower-carb without taking away the joy of the season.

Keeping Christ at the Center of Christmas ✝️

Christmas is first and foremost about celebrating the birth of Jesus Christ.

In the middle of the baking, decorating, shopping, and busy holiday schedules, it can be easy to get caught up in everything surrounding Christmas and forget why we celebrate.

For our family, I want Christmas to be a time to slow down and remember God's greatest gift to us.

“For unto you is born this day in the city of David a Saviour, which is Christ the Lord.”

The Christmas season gives us an opportunity to gather around the table, but it also gives us an opportunity to gather together in faith.

We can pray together, give thanks, attend church, read the Christmas story, and remind our daughter that Christmas is about Christ, love, hope, and God's faithfulness.

Family Traditions Around the Christmas Table ❤️

Some of my favorite holiday memories happen around the table. Food has always been one of the ways families share their stories. A recipe can remind us of a grandmother, a childhood Christmas, a trip overseas, or a family member who taught us how to make something. Our family has American, Hungarian, Swedish, and German roots, so our traditions don't always fit into one box. That's what makes them special.

My husband is Hungarian, and Hungarian food and hospitality are an important part of our family. I also love remembering the Swedish and German traditions that are part of my heritage. Over the years, we've created our own family traditions by combining pieces of the past with the life we are building together today.

A Lower-Carb Holiday Table

Following a lower-carb lifestyle doesn't mean giving up the Christmas table. It simply means being intentional about the foods we choose and finding alternatives that still feel festive and satisfying.

A holiday meal can include plenty of delicious options:

  • Herb-roasted turkey or ham

  • Garlic-roasted green beans

  • Brussels sprouts with bacon

  • Roasted broccoli

  • Cauliflower mash

  • Creamy cauliflower casserole

  • Fresh salads

  • Cheese and charcuterie boards

  • Bacon-wrapped appetizers

  • Low-carb vegetable sides

  • Sugar-free or low-carb desserts

  • Keto cheesecake or lemon cheesecake treats

  • Low-carb chocolate treats

There are so many ways to build a beautiful holiday meal without feeling like you are missing out. Sometimes the best part isn't finding a perfect substitute for every traditional food. It's simply enjoying the foods that work for you and focusing on the people sitting around the table.

You Don't Have to Fear the Holiday Season

The holidays can sometimes feel stressful when you're trying to maintain a certain way of eating. There are cookies everywhere. Christmas parties bring appetizers and desserts. Family gatherings may include foods that aren't part of your everyday routine, but I don't believe the holidays should be filled with guilt. For me, lower-carb living is about making choices that support the way I want to live, not about being afraid of food. One meal does not define your entire journey. One Christmas dinner does not erase months of progress, and enjoying a special family recipe doesn't mean you have failed. There is room for celebration, gratitude, balance, and grace.

Making Memories in the Kitchen

Some of the sweetest family memories can happen in the kitchen. Cooking together gives us an opportunity to slow down and talk, laugh, teach, and share. Our daughter enjoys being involved in the kitchen, and I love seeing her learn that food is about more than simply eating. Recipes carry stories. They connect generations. They help us remember where our families came from, and they give us an opportunity to create something new for the next generation. I hope she grows up remembering not just what was on our Christmas table, but how it felt to gather there.

Christmas Across Cultures 🇺🇸🇭🇺🇸🇪🇩🇪

One of the things I love about our family is that Christmas gives us an opportunity to celebrate our different cultural roots. American traditions bring their own familiar comfort. Hungarian traditions remind us of my husband's heritage. Swedish and German traditions connect me to my own heritage. Then there are the traditions that belong only to our immediate family....the ones we are creating together. Maybe that's what makes family traditions so beautiful. We don't have to recreate the past exactly. We can honor where we came from while creating something meaningful for the future.

The Gift of Hospitality

One thing I especially appreciate about our different cultures is the importance of hospitality. There is something beautiful about welcoming people into your home and making sure there is something good to eat and drink. Christmas gives us another opportunity to practice that kind of hospitality. It doesn't have to be elaborate....a simple meal....a cup of coffee....a plate of appetizers....a homemade dessert....a place at the table. Sometimes the greatest gift we can give someone is simply making them feel welcome.

Christmas Is About More Than Food

As much as I love food, Christmas reminds me that the most important things cannot be placed on a dinner table.

Faith.

Family.

Love.

Forgiveness.

Generosity.

Time together.

The people we love are the memories we carry with us.

The food will eventually be eaten.

The decorations will eventually come down.

The Christmas lights will eventually be packed away.

But, the memories we make together can stay with us for years.

A Christmas Prayer 🎄🙏

Heavenly Father,

Thank you for the gift of your son, Jesus Christ. Thank you for our family, for our home, for the food on our table, and for the people you have placed in our lives. Help us slow down during this busy season and remember what Christmas is truly about. Help us to be grateful for what we have, generous toward others, and mindful of those who may be hurting or alone during the holidays. Bless our family and help us create traditions filled with love, faith, laughter, and meaningful memories. May our home be a place of peace and hospitality, and may everything we do point back to you. Thank you for the greatest gift of all—Jesus.

Creating New Traditions 🎄

Every family has traditions that came before them, but we also get to create new ones. 

Maybe it's making a special Christmas breakfast.

Maybe it's baking a favorite family recipe.

Maybe it's watching the same Christmas movie every year.

Maybe it's attending Christmas Eve church services.

Maybe it's making a low-carb dessert together.

Maybe it's simply sitting around the table after dinner and talking a little longer.

These small traditions can become the memories our children remember most.

We don't need a perfect Christmas.

We just need to be present for it.

🦃 A Thanksgiving Table Full of Gratitude: Family, Faith & Low-Carb Living

November has a way of reminding us to slow down. The leaves are changing, the days are getting shorter, and Thanksgiving gives us an opportunity to pause from the busyness of everyday life and remember what truly matters. For our family, Thanksgiving is about so much more than food. It's about family, faith, gratitude, traditions, and the blessing of gathering around the table together. Yes, food is certainly part of the celebration! ❤️ As someone following a lower-carb lifestyle, I've also learned that Thanksgiving doesn't have to mean choosing between enjoying the holiday and staying true to the way we want to eat. There is room for both.

🙏 Giving Thanks to God

Before we talk about turkey, side dishes, or dessert, Thanksgiving begins with gratitude.

We have so many reasons to thank God.

For our family.

For our home.

For the people He has placed in our lives.

For the ability to gather around a table and share a meal.

For the memories we've made and the ones still waiting to be created.

Life isn't perfect, and every season brings its own challenges. Thanksgiving reminds me to look for God's blessings even in the ordinary moments. 

Sometimes those blessings are right in front of us.

A child's laughter.

A conversation with my husband.

A family meal.

A prayer before dinner.

A quiet moment when we realize just how much we have to be thankful for.

“Give thanks to the Lord, for He is good; His love endures forever.” — Psalm 107:1

❤️ Family Around the Table

One of my favorite things about Thanksgiving is the gathering around the table. Our family has American, Hungarian, Swedish, and German roots, and food gives us a beautiful way to celebrate those different traditions. Every family has its own recipes, stories, and traditions passed down through generations. Some recipes remind us of grandparents. Some remind us of childhood. Others become new traditions that our children will hopefully remember years from now. I love that food can tell a story. A recipe can carry a piece of our heritage from one generation to the next. Sometimes, we take those beloved recipes and give them a little modern twist to fit the way our family eats today.

🥑 Thanksgiving the Low-Carb Way

Following a keto or low-carb lifestyle doesn't mean Thanksgiving has to become a boring plate of plain turkey and vegetables. There are so many delicious ways to create a lower-carb Thanksgiving meal.

Think:

  • 🦃 Roasted turkey

  • 🥦 Garlic-roasted broccoli

  • 🧀 Cheesy cauliflower

  • 🥗 Fresh green salads

  • 🥬 Roasted Brussels sprouts

  • 🧈 Green beans with butter and herbs

  • 🥔 Cauliflower mashed “potatoes”

  • 🥓 Bacon-wrapped vegetables

  • 🍋 Low-carb cheesecake treats

  • 🍫 Sugar-free chocolate desserts

The goal isn't perfection. It's finding delicious foods that allow us to participate in the celebration while still making choices that fit our lifestyle.

🍽️ We Don't Have to Fear the Holiday Table

One thing I've learned through my own low-carb journey is that food shouldn't become something we fear.

Thanksgiving is a celebration.

It's okay to enjoy a special meal.

It's okay to try a family recipe.

It's okay to have a little dessert.

For me, the bigger picture is about being intentional most of the time and enjoying special occasions without turning one meal into an all-or-nothing situation. A healthy lifestyle isn't created by one Thanksgiving dinner or undone by one Thanksgiving dinner. It's built through the everyday choices we make over time.

🇭🇺 Celebrating More Than One Culture

Because my husband is Hungarian and our family has American, Hungarian, Swedish, and German roots, our table often reflects more than one culture. That's something I treasure. Food gives us a way to introduce our daughter to different traditions and flavors while creating traditions that belong uniquely to our family. 

Maybe Thanksgiving includes classic American dishes alongside a Hungarian-inspired recipe.

Maybe a familiar family favorite gets a low-carb makeover.

Maybe we're simply sitting around the table sharing stories.

Whatever ends up on the plates, what matters most is the people sitting around them.

👧 Teaching Our Daughter Gratitude

As parents, we also have the opportunity to teach our children that Thanksgiving is about more than turkey and dessert.

It's about gratitude.

It's about generosity.

It's about noticing the blessings we sometimes take for granted.

We want our daughter to understand that family traditions aren't only about what we eat or what we do.

They're about the love behind them.

A prayer.

A helping hand.

A shared meal.

A conversation.

A memory.

These are the things that can stay with a child long after the Thanksgiving decorations are packed away.

🥧 Creating New Traditions

Some of our family traditions come from generations before us. Others are completely new. That's one of the beautiful things about raising a family. We get to carry forward the traditions that matter while creating new ones along the way. Maybe one year we make a special low-carb dessert. Another year we take a family walk after dinner. Maybe we spend time talking about something we're especially thankful for. The tradition doesn't have to be elaborate. It just has to mean something.

🙌 A Thanksgiving Prayer

Heavenly Father,

Thank You for the gift of family, for the food before us, and for the people You have placed in our lives. Thank You for the blessings we see and for the blessings we sometimes overlook. Help us remember that everything we have is a gift. Give us grateful hearts, generous spirits, and opportunities to share Your love with others. Bless our families and protect those who are struggling, lonely, or grieving this Thanksgiving. Help us slow down, appreciate one another, and remember what truly matters. Thank You for Your faithfulness through every season.
