🧀 Keto Cheesy Spinach Egg Muffins
Servings: 6 muffins (2 muffins = 1 serving)
🥚 Ingredients:

6 large eggs

1/4 cup heavy cream

1/2 cup shredded cheddar cheese

1 cup fresh spinach, chopped

1/4 cup diced onion (optional)

Salt & pepper to taste

1 tbsp olive oil or butter

Optional add-ins: Bacon bits, sausage, mushrooms, bell peppers, jalapeños
Instructions:

Preheat oven to 375°F (190°C) and grease or line a muffin tin.

Sauté onion in oil for 2–3 mins. Add spinach and cook until wilted. Set aside.

Whisk eggs, heavy cream, salt, and pepper in a bowl.

Mix in sautéed veggies, cheese, and any extras.

Fill muffin cups evenly and bake for approximately 18–20 minutes.

Let cool slightly before serving.
