Keto Cheesy Spinach Egg Muffins

🧀 Keto Cheesy Spinach Egg Muffins

Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 6 muffins (2 muffins = 1 serving)

🥚 Ingredients:

  • 6 large eggs

  • 1/4 cup heavy cream

  • 1/2 cup shredded cheddar cheese

  • 1 cup fresh spinach, chopped

  • 1/4 cup diced onion (optional)

  • Salt & pepper to taste

  • 1 tbsp olive oil or butter

  • Optional add-ins: Bacon bits, sausage, mushrooms, bell peppers, jalapeños

 Instructions:

  1. Preheat oven to 375°F (190°C) and grease or line a muffin tin.

  2. Sauté onion in oil for 2–3 mins. Add spinach and cook until wilted. Set aside.

  3. Whisk eggs, heavy cream, salt, and pepper in a bowl.

  4. Mix in sautéed veggies, cheese, and any extras.

  5. Fill muffin cups evenly and bake for approximately 18–20 minutes.

  6. Let cool slightly before serving.
