A Faith-Filled Friday

Simple Keto Living, Family & Weekend Blessings

Happy Friday, friends! ❤️

There is something special about Friday. The workweek is winding down, the weekend is just around the corner, and we have an opportunity to slow down, reconnect with our families and thank God for the blessings He has given us.

Life can get busy, and sometimes we put so much pressure on ourselves to eat perfectly, accomplish everything on our to-do list, and keep up with all our responsibilities. I've been reminded that we don't have to have everything figured out to enjoy the blessings of today. Sometimes, the best moments are the simplest ones: sharing a meal around the table, laughing with our children, enjoying a quiet cup of coffee, having a friend stop by for a visit, or just taking a few minutes to pray and thank God for another day.

Faith, Family & Finding Joy in the Little Things

In our home, we enjoy a wonderful blend of cultures and traditions. I'm American with German and Swedish roots, and my husband is Hungarian. Our family brings together different backgrounds, flavors, and traditions, but our love for one another and our faith in God are what make our home special.

Food has always been one of the ways we share love and create memories. While we're mindful of our low-carb, keto lifestyle, we still want our meals to feel comforting, delicious, and enjoyable. Eating differently doesn't mean giving up the joy of gathering around the table or celebrating the foods and traditions that connect us to our roots.

As we head into the weekend, I want to encourage you to give yourself a little grace. If your week was difficult, take a breath. If you didn't stick to your eating goals as closely as you had hoped, tomorrow is another opportunity to begin again. One meal doesn't define your journey and neither does one difficult day.

Our health journey doesn't have to be about perfection. We can make thoughtful choices, care for the bodies God has entrusted to us, and still enjoy life along the way.

A little Friday reminder: You don't have to do everything perfectly to make progress. Take one small step, give thanks for what you have, and leave room for God's peace in your weekend.

“This is the day which the LORD hath made; we will rejoice and be glad in it.” — Psalm 118:24

An Easy Keto Recipe for the Weekend: Cheesy Garlic Zucchini Bites 🧀

If you're looking for something simple to serve with dinner or enjoy as a weekend snack, these cheesy zucchini bites are an easy low-carb option. They're full of garlic and cheese flavor, require just a handful of ingredients, and are perfect for sharing.

Prep time: 10 minutes
Cook time: 15–20 minutes
Servings: 2

Ingredients

  • 1 medium zucchini, grated

  • 1/2 cup shredded mozzarella cheese

  • 2 tablespoons grated parmesan cheese

  • 1 egg

  • 1/2 teaspoon garlic powder

  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Grate the zucchini and squeeze out as much moisture as possible using a clean kitchen towel.

  3. In a bowl, combine the zucchini, mozzarella, parmesan, egg, garlic powder, salt, and pepper.

  4. Drop small spoonfuls of the mixture onto the baking sheet and gently flatten them into little bites.

  5. Bake for 15–20 minutes or until golden brown and cooked through. Let them cool slightly before serving.

Keto tip: Squeezing out the zucchini's excess moisture helps the bites hold together and become crispier. Serve them with a little sugar-free marinara or your favorite low-carb dipping sauce.

Nutrition note: Carbohydrates vary by ingredient brand and zucchini size. For accurate total and net carbs per serving, calculate the nutrition using the specific ingredients you use.

Wishing You a Blessed Weekend 🙏

As your weekend begins, I hope you find time to rest, enjoy your family or friends, prepare something delicious, and appreciate the little things that make life beautiful.

Maybe you'll try a new keto recipe, revisit a family favorite, or simply sit down together for a meal without rushing. Whatever your weekend looks like, remember that you don't need a perfect plan to make meaningful memories.

May God bless your home with peace, your heart with gratitude, and your weekend with moments of joy.

From my family to yours, have a wonderful and blessed weekend!
