Ingredients:

  • 1/2 cup coconut oil (or butter)

  • 1/2 cup unsweetened peanut butter (or almond butter)

  • 1/4 cup cocoa powder (unsweetened)

  • 2–4 tablespoons powdered erythritol (like Swerve or Lakanto), to taste

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Optional: chopped nuts, shredded coconut, or sugar-free chocolate chips

Instructions:

  1. In a medium saucepan over low heat, melt the coconut oil and peanut butter together, stirring until smooth.

  2. Remove from heat and whisk in the cocoa powder, erythritol, vanilla extract, and salt until fully combined.

  3. Pour the mixture into a small parchment-lined dish (like a loaf pan).

  4. Sprinkle with optional toppings if desired.

  5. Freeze for about 30–60 minutes until firm.

  6. Cut into squares and store in the fridge or freezer (it melts at room temp!).
