½ cup unsalted butter

16 oz cream cheese

¾ cup monk fruit (or preferred keto sweetener)

2 large eggs

½ tbsp lemon juice
-
1 tbsp vanilla extract
-
1 lb fresh strawberries, halved

1 box sugar-free strawberry Jell-O
๐ Instructions:

Prepare the Crust: Mix all dry ingredients. In a separate bowl, cream together butter and cream cheese. Add eggs and vanilla, then gradually mix the wet into the dry. Spread into a greased 9 x 5 pan.

Make the Filling: Blend cream cheese and sweetener until smooth. Add eggs, lemon juice, and vanilla. Pour gently over the crust.

Bake at 350°F for 40 minutes. Let cool completely.

Topping: Halve strawberries and prepare Jell-O as directed. When both cheesecake and Jell-O have cooled slightly, layer berries on top and pour partially set Jell-O over them.
