  • 1 cup zucchini, chopped

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup spinach (fresh or frozen)

  • 1/4 cup onion, diced

  • 1/2 cup cheddar cheese, shredded (or dairy-free alternative)

  • 1 tbsp olive oil or avocado oil

  • Salt & pepper to taste

  • Fresh herbs (like basil or parsley), optional

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Heat oil in an oven-safe skillet over medium heat. Add onions and cook until soft, about 3 minutes.

  3. Toss in zucchini, tomatoes, and spinach. SautΓ© for another 4–5 minutes until veggies are tender.

  4. In a bowl, whisk eggs, almond milk, salt, and pepper.
