🥖 Rustic Keto Bread & Mountain Memories: A Hungarian Tale
There’s a quiet kind of joy in baking your own bread—especially when the outside air is crisp, and your legs are still sore from climbing a hiking trail. That’s what inspired this rustic loaf of keto bread—born not just out of a love for low-carb living, but from a day spent hiking with my family.
🏞️ A Hike to Remember
Last winter, we took a trip to the mountains in Europe (in both Hungary and Poland). One of the areas we visited in Hungary was just a few hours from Budapest. This was my second time hiking there. It’s a place where leaves crunch underfoot and every turn in the trail reveals another breathtaking view. Our daughter always runs ahead to gather her nature finds, while we took our time, breathing in the crisp mountain air.
By the time we hiked to our destination, we were winded, laughing, and craving something warm and nourishing. That’s when this idea of Rustic Keto Bread came to mind. This is something that we can make ahead of time and pack on our next hiking adventure.
🍞 The Rustic Keto Loaf
This bread is simple, earthy, and wholesome—just like the countryside that inspired it.
Ingredients:

1 ½ cups almond flour

¼ cup ground flaxseed (for a nutty texture)

1 tbsp apple cider vinegar

¼ cup melted butter or lard

1 tsp baking powder

½ tsp salt

Optional: Sprinkle pumpkin seeds or sunflower seeds on top before baking
Bake at 350°F (180°C) for 30–35 minutes, until golden and fragrant.
